Mix butter and sugar by hand until well mixed. Add flour and mix until hand comes clean (it is obvious when this happens)

Roll out 3/8 inch thick, cut as desired with cookie cuters and place on ungreased cookie sheet. Pick with a fork.

Bake about 1 hour at 275° F. till set but not browned on top.

Remove from oven and sprinkle with superfine sugar.

These keep well for several weeks and improve with age.
